Chop onions (1) , few cloves of garlic, a 1/2 inch piece of ginger very fine
In oil ( I prefer mustard oil for vegetables) add 1/4 tsp of methi seeds, chopped onions, ginger garlic and 2 whole red chillies.
Sauté for few minutes and add 3 medium sizes potatoes, chopped into 8 pieces and sauté for few minutes.
add 1 cup chopped methi leaves.
( tip- don’t wash and leave for long as it becomes bitter)
Cook covered for few minutes till potatoes are tender. If any extra water is left from the methi dry it.
Eat with chapati or paratha
