Ingredients 1. 3 medium boiled potatoes 2. 1 medium onion finely sliced 3. 2 whole red chill & 1/2 tsp zeera seeds4. 1 tsp each roasted zeera ( cummin) powder & amchoor powder ( dried mango)5. Salt to tasteGreen coriander for Garnish2tbsp desi ghee Method Mash potatoes by hand or masher but not too fine. Add the salt, amchoor and zeera powder at this stage as it gets well mixed Heat oil Fry the Red chili & zeera seeds.When sputtering add the onions & fry till golden brown. Add the mashed potatoes & keep stirring for at least 10 minutes till it’s well roasted.Scrape from the sides of pot when it sticks & stir it.Garnish with chopped green coriander & serve with parathas.
