<p>In oil ( I prefer mustard oil for vegetables) add 1/4 tsp of methi seeds, chopped onions, ginger garlic and 2 whole red chillies.</p>
<p>Sauté for few minutes and add 3 medium sizes potatoes, chopped into 8 pieces and sauté for few minutes.</p>
<p>add 1 cup chopped methi leaves.</p>
<p>( tip- don&#8217;t wash and leave for long as it becomes bitter)</p>
<p>Add salt</p>
<p>Cook covered for few minutes till potatoes are tender. If any extra water is left from the methi dry it.</p>
<p>Eat with chapati or paratha</p>
