I love the vegetable which looks like gherkins or tiny little cucumber & is called the coccinia cordifolia. We calm it called kundru …
But for some reason it’s also called gentleman’s toes…and most commonly, ivy gourd.
It’s a magic vegetable as it helps in maintaining sugar levels & that’s very important in Ramzan at time of iftar.
Ingredients
Kundru – 1/2 kg ( hold from top and make 2 slits being careful not to let it separate
1 tsp ginger garlic paste
Pinch of turmeric
1 tsp coarsely ground coriander
Salt & chilli powder to taste
Oil
1 onion finely sliced
Method :
Mix the ingredients in italics and stuff them with a blunt knife into the slots.
In a kadhai heat mustard oil.
When it’s hot, lower flame add onions. When golden add the stuffed Kundru.
Cook on Sim, covered for 15 minutes.
Turn very lightly with flat spatula so it doesn’t break.
Serve hot with chapati
